Today was cloudy and dreary; the perfect day to make my favorite comfort food, Chicken Noodle Casserole. This recipe is so easy and great for a fast weeknight meal. I remember when I was little, my mom would buy these little pre-made meals in individual cans from the soup aisle with a similar concoction. This homemade version is much better, but still takes me back to my childhood. As a short cut I used pre-shredded rotisserie chicken from HEB. The frozen vegetables mixtures are another short cut I keep in my freezer. The frozen vegetables can easily be added to soups and casserole dishes and you can add as much or as little as you need.
The prep could not be easier. Simply boil the egg noodles to cook as directed on the package. Combine the remaining ingredients in a large mixing bowl and stir to combine. Add drained cooked noodles to the mixture and pour into your baking dish. Cover with foil and bake at 350 degrees for 35 minutes or until warmed throughout. Let the dish rest for 5 minutes before serving; garnish with grated parmesan if desired..I highly recommend this addition!
Chicken Noodle Casserole
Ingredients
- 2 cups Uncooked Egg Noodles
- 2 cups Cooked, Shredded Chicken*
- 10 ounces Frozen Pea and Carrot Mix
- 10 ounces Frozen Corn
- 1 can Cream of Chicken Soup
- 1 can Cream of Mushroom Soup
- 2 tbsp Melted Butter
- 1 cup Whole Milk
- Salt & Pepper to Taste
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic Powder
- 1/2 tsp Italian Seasoning
- Grated Parmesan optional garnish
Instructions
- Preheat oven to 350 degrees and prepare a greased 13 X 9 baking dish.Boil egg noodles according to the package directions. Drain.Mix all remaining ingredients together in large bowl. Add drained egg noodles; stir until incorporated. Pour mixture into your prepared baking dish.Cover with foil and bake at 350 degrees for 35 minutes or until warmed throughout. Let rest for 5 minutes before serving. Garnish with grated parmesan if desired.
