Cookie season is upon us and although spritz butter cookies can be made and enjoyed all year they’re especially popular during the holiday season. This recipe is perfect for those who are gluten intolerant or following a low-carb keto diet. Keto spritz cookies are easy to make and are a huge hit!

What are Spritz Cookies

The name spritz comes from the German word spritzen, meaning “to squirt” because the soft dough is squirted or pushed through cookie presses using different plates to make different shapes and designs.

Spritz cookies are in the shortbread cookie family and have a high butter content. The high butter content results in a soft cookie dough. This soft dough allows the cookies to be piped through a pastry bag or pressed using a cookie press onto a non-stick cookie sheet.

Equipment needed to Make Spritz Cookies

  • Large Mixing Bowl
  • Hand Mixer or Stand Mixer with Bowl & Paddle Attachment (either mixer will work, but I find I prefer a stand mixer)
  • Spatula
  • Measuring Spoons
  • Measuring Cups
  • Non-Stick Cookie Sheets
  • Cookie Cooling Racks
  • Cookie Press or a Piping Bag and Tip

Keto Spritz Cookies Ingredients

Almond Flour – Use finely ground almond flour

Coconut Flour – I find coconut flour adds a tad of sweetness

Butter – Use softened un-salted butter

Swerve Powdered Confectioners Sugar – You may use powdered Swerve or a powdered monk fruit sweetener.

Baking Powder – A little baking powder gives cookies a little lift.

Egg – A whole large egg binds all of the ingredients together.

Lemon Zest – Add the lemon zests from one large lemon or add orange zest for added fresh flavor.

Almond Extract – An optional nice added flavor. If you do not have almond extract, make up the difference with a little extra vanilla extract.

Vanilla Extract – Adding vanilla extract is essential for flavor.

Tips for Making Keto Butter Spritz Cookies

Choose finely ground almond flour. Blue Diamond Almond Flour is my go to flour for keto baking. The finely ground almond flour results in a cookie texture that is very close to traditional spritz cookie recipes.

Use softened un-salted butter for this recipe. Let the butter sit on the counter for 1 – 2 hours before baking or soften the butter slightly in the microwave before adding to the mixing bowl.

I do not recommend using parchment paper or silicone mats for this recipe. To create the best kept design, pipe or press the cookie dough directly onto a non-stick cookie sheet. The cookie dough will be able to grab onto the metal surface of the baking sheet when pressed.

Spoon the cookie dough into your cookie press and pack it down with a spatula to get rid of any pockets of air.

To get the first cookie started from the press, squeeze the handle twice to get the first cookie. If a cookie is messy, simply scrap it off of the baking sheet and put the dough back into the mixing bowl for the next round.

When using a cookie press, place the end of the press down onto the baking sheet and squeeze the handle once. Pull the cookie press straight up and release the handle. The best spritz cookie design is made by pulling the press straight up.

For best results, the spritz cookie dough should be slightly cooler than room temperature. If the dough is getting too warm, pop it in the refrigerator for 5 – 10 minutes to cool off. Do not refrigerate the dough for too long. If the dough is too cool, it will not easily press. If the dough is too warm, you spritz cookies will not maintain their decorative cookie shape.

How to Make Easy Keto Spritz Cookies

Start by preheating your oven to 325°F. Gather all of your equipment and ingredients.

Measure the almond flour, coconut flour, baking powder and grate the lemon zest into a large bowl. Use a whisk to combine the dry ingredients.

Add the butter and sugar to your mixing bowl. Cream the butter and sugar together until creamy and well incorporated. Add the egg, vanilla and almond extract and mix until combined. Slowly spoon the flour mixture into the butter mixture and mix well using the paddle attachment.

If your house is warm, you may chill the dough for 5 – 10 minutes if needed. Spoon the cookie dough into your cookie press with a spatula removing as many air pockets as possible. Follow the manufacturer’s instructions for adding the patterned disk to your press.

Press cookies one at a time directly onto your non-stick cookie sheet. Bake for 10-12 minutes on the middle oven rack at 325°F. Remove the cookie sheet from the oven and allow the cookies to cool. After 15 minutes, remove the cookies to a cooling rack to cool completely.

Once completely cool, the cookies will have a crispy outside with a buttery inside.

Store spritz cookies in an airtight container at room temperature up to a week.

Optional Decorating Ideas for Keto Spritz Cookies

While the whole family will like this traditional Christmas cookie just as they are, you can add some extra flair to decorate these keto cookies.

  • Dip half of each cookie in keto compliant melted chocolate
  • Add chopped nuts to the top of each cookie
  • Color keto complaint granular sweetener with food coloring and sprinkle on top prior to baking
  • Use spirulina powder or beet juice to add color to your cookie dough while mixing. This will yield a naturally colored green and deep red colored dough that is perfect for Christmas cookies.
  • Make a glaze by combining keto compliant powdered sweetener with unsweetened vanilla flavored almond milk. It will add a touch more sweetness to each cookie.

Can you Freeze Spritz Cookies

Yes, you can freeze spritz cookies for up to 3 months. Get a jump start on holiday baking and freeze your baked and decorated cookies in the freezer. Thaw at room temperature or place in a container in the refrigerator for longer storage. Because these are small cookies, they will thaw quickly, so you don’t have to get in a panic if you forgot to take them out of the freezer ahead of time.
